Grandma Heetland's Date Bars

Medjool Date Filling:

2 ¼ cups Medjool Dates (chopped)
1 cup water
2 Tbsp sugar

Mix all in saucepan. Cook over low heat, stirring constantly until thickened. Cool

Crumb Mixture:

1 ½ cup brown sugar (packed firmly)
¾ cup butter (softened)
1/3 cup vegetable shortening
3 cups Bisquick baking mix
2 ¼ cups quick cooking oats
½ tsp. cinnamon

 
 
  Heat your oven to 375 degrees. Grease 9x13 pan. Mix brown sugar, butter and shortening until smooth. Mix in Bisquick baking mix, oats and cinnamon. Press half of the mixture into pan; spread Medjool Date filling on mixture. Top with remainder of crumb mixture, press gently into filling. Bake in your oven 35 to 45 minutes (until light brown). Cool- cut into squares.
