Wonderfully light, but rich and elegant. Sweet florals and the unmistakable sweetness of AZ honey. Alcohol Content: 10.50%.
Winemaker’s Notes: Historically, meads were fermented with wild yeasts and bacteria residing on the skins of the fruit or within the honey itself. Wild yeasts can produce inconsistent results, but modern labs have released yeast strains identified specifically for mead fermentation. These are strains that have been selected because of their characteristic of preserving delicate honey flavors and aromas.
Pairings: strong, earthy cheeses, hearty stews and spicy vegetable dishes.
Jerome Winery was John McLoughlin’s first line of handcrafted wines. The wine follows a more traditional way of winemaking, bottled mainly as specific varietal wines. It hearkens back to the family's roots in the business. Family members worked in the vineyard as the first grapevines were planted and harvested by hand. The family photos on the labels honor that tradition of family and independent family businesses.
