20 people These Oatmeal Date Bars will have you feeling nostalgic! Simple oat crumb crust is filled with softened Medjool Dates.
Ingredients and Method
Method
- Preheat oven to 400 degrees.
- For the filling, combine dates, sugar, and water in med/large sauté pan.
- Cook at medium-low heat for 10 minutes, stirring occasionally.
- Set aside to cool. Puree if desired.
- To make the crust, beat shortening or butter in large bowl with brown sugar.
- Add flour, baking soda and salt to brown sugar/butter (in small amounts), mixing or cutting w/ pastry cutter.
- Add oats and stir to combine.
- Grease a 13 x 9 baking dish.
- Pat ½ of the crust along the bottom of the baking dish.
- Spread filling evenly, leaving 1-2 cm. space from the edge. This helps to keep bars from sticking to the edge.
- Take remaining crust and sprinkle over the filling until covered.
- Bake for 25-30 minutes or until top is lightly browned.
- Cool before cutting and serving.
